Denial of the End of Summer Cocktails

sunset lake harrietThe calendar says September, the kids are back at school and the scorching heat is gone (at least for now). Yes, there is sufficient evidence that summer is subsiding and we are easing into fall.

Still, you don’t have to give in to the inevitable just yet. As we know, summer-like weather can stick around these parts for a while, and September is oftentimes full of sunny, mild days and cool, mellow nights.

So, in celebration of that, and because we are not ready to say good-bye to the season just yet, we thought we’d share with you some cocktail recipes that scream “SUMMER!!”

We call these the Denial of the End of Summer Cocktails. And here they are:

Tequila Sangria  – there are all kinds of sangria so why not make one with a little tequila?

Ingredients:Simple Sangria

2 to 3 pineapple slices
2 to 3 orange slices
2 to 3 blackberries
2 to 3 lime wedges
2 ounce or 1/4 cup tequila
1 ounce or 2 tablespoons elderflower-flavored liqueur*
1 ounce or 2 tablespoons simple syrup*
2 ounces or 1/4 cup pineapple juice
Splash orange juice
Ice, as needed
Red wine, as needed (recommended: rioja)

* Peach-, pear- or ginger-flavored liqueur can be substituted.
* Simple syrup is equal parts sugar and water cooked until the sugar dissolves and then cooled completely.


In desired drinking glass, add the pineapples, oranges, blackberries, and lime wedges. Note: If you don’t like the fruits suggested here feel free to use whichever fruits you desire.

Next add the tequila, elderflower-flavored liqueur, simple syrup, pineapple juice, and orange juice. Add ice to glass and stir to mix ingredients. Top glass with red wine and enjoy.


Mojito – there is something so summery about rum and mint


1 bunch fresh mint, cleaned
1 cup sugar
4 lemons, juiced
4 limes, juiced
Ice cubes
1 (750 ml bottle) light rum
1 liter club soda


In a large pitcher, muddle mint sprigs with sugar and lemon and lime juices until well combined. Add ice, rum and club soda and stir together. Pour into glasses, straining out mint. Enjoy!


Minnesota Mule – aka Moscow Mule, but if you use Minnesota-made vodka you get to call it a Minnesota Mule.


1 ounce vodka
1 tsp. sugar syrup
Fresh lime juice
1/2 cup ginger beer
1 sprig fresh mint
1 slice of lime


In a mug or highball, pour vodka over ice. Add sugar syrup and lime juice. Top with ginger beer and stir. Garnish with mint sprig and lime slice.


Our last Denial of the End of Summer Cocktail comes to us from The Pourhouse. They call it The Mistress.


1 ounce Absolut Raspberry
1 ounce Absolut Mandarin
1/2 ounce Peach Schnapps
Pineapple Juice
Cranberry Juice


In a pint glass, our combine the vodkas and the Schnapps. Top with pineapple and cranberry juices. Shake and enjoy
