The craft distillery, co-founded by Nate and Kirsten Karnitz and Chris Kulzer, currently bottles Tippling House Vodka – named for the illegal speakeasies set up in people’s homes during the Prohibition era – and Greenway Gin, which honors the Midtown Greenway trail situated just blocks from the distillery. The new cocktail lounge will offer handcrafted cocktails made with Lawless spirits, such as the classic gin & tonic, delicious Cherry Bark Collins and a new twist on mimosas – sans champagne.
“The Lawless name is all about doing things a little unconventionally,” says Nate. “We don’t confine ourselves to the rules of what we are ‘supposed to’ do as a distillery and cocktail lounge.”
The Seward neighborhood carries a storied history of tippling houses, speakeasies and after-work hangouts for railroad and steelworkers from the pre-Prohibition era through the 1960s. And Lawless Distilling Company pays homage to the area’s past rough-and-tumble saloon culture, while also looking to the future of distilling – handcrafting ingredients from grain to glass.
Lawless sources all of its wheat from fields in Cold Spring, MN, and hand-mills the grain on-site at the farm. Back at the distillery, the finished spirits are hand-bottled in small batches before being distributed to liquor stores across the Twin Cities.
What’s more, Bittercube, a company that consults with restaurants and bars across the country, created the unique cocktails for the Lawless lounge. Bittercube’s team of dedicated cocktail craftsmen are well-known for creating the best libations in town featuring new – and often surprising – ingredients.
The Lawless Distilling Company cocktail lounge will also feature 14 types of Bittercube’s specialty flavored artisanal liqueurs. Visitors may also purchase one 375 mL bottle of Tippling House Vodka or Greenway Gin at the lounge each day.
Lawless will be open Wednesdays and Thursdays from 4:00 pm until 10:00 pm, Fridays from 4:00 pm until midnight, and Saturdays from 12:00 pm until midnight.
