After repeatedly selling out around town at farmers markets, hosting pop ups at Sisyphus Brewing, and even sampling at the Minnesota State Fair, sister and brother Aubry and Kale Walch will see their dream of opening a vegan butcher shop come to fruition.

The Herbivorous Butcher celebrates their Grand Opening on Jan 23 & 24, and while you can find them at 507 1st Ave NE. in Minneapolis, you won’t find a butcher shop quite like this anywhere else in the world.

They will be open six days a week, giving you ample opportunities to swing by the neighborhood shop on your way home from work to pick up a couple Porterhouse Steaks for dinner, or maybe some All American Sausage for your weekend breakfast. Do you love fondue but can’t have dairy? The Herbivorous Butcher is the perfect solution; perhaps you should try the Herb Smoked Cheddar. Many have already made their vegan stuffed Turkey a part of their Thanksgiving tradition.

Most of their meat-free meats have a high-protein wheat flour base, and after the shop opens, Aubry and Kale will work on adding gluten-free vegan meat options (their Pulled Pork is gluten-free). The cheeses have an organic soy milk base, and you’ll find ingredients that are recognizable and easy to pronounce.

The Herbivorous Butcher’s products are GMO-free and contain locally-sourced ingredients, many of which are organic. Aubry and Kale take great pride in offering high quality products, and have found omnivores, vegetarians, and vegans alike who have come to love what they cook up. Customers search out their vegan meats and cheeses for a variety of reasons, ranging from animal welfare to health and the environment.

They plan to keep spreading the local love by offering retail space to many Twin Cities businesses, too. You’ll find bars of K’ul Chocolate on the shelf next to maple syrup from Horner’s Corner (which happens to be a key ingredient in the Maple Sage Breakfast Sausage). Jars of Grlk Sauce and You Betcha Kimchi are nestled into the cooler with the vegan cheeses. And you’ll even be able to pick up dog treats by Amelia and Holly’s for your furry friends.

The VeganEgg by Follow Your Heart isn’t local, but The Herbivorous Butcher happens to have a small amount of this new, popular product in stock, along with some other nationally known vegan food products.

The space has been carefully crafted over the past year with a lot of love, and Aubry and Kale look forward to sharing their dream with you starting this weekend and beyond.

The Grand Opening is happening from 10:00 am until 6:00 pm on Saturday, January 23 and from 11:00 am until 4:00 pm on Sunday, January 24. For more details, please click here.
